    3 large eggs
    1 9" ready to bake pie crust
    8 oz Mozzarella Cheese, part skim milk
    1/3 cup Ricotta Cheese, part skim milk
    Spinach, frozen, 1 package (10 oz)
    1 Tbsp butter
    1 oz lemon juice
    9 large sauteed scallops
    9 oz sauteed shrimp
    1/4 tsp Garlic powder
    1/4 tsp Pepper, black


Preheat oven to 350 degrees. Prepare pie crust as directed, place in coated pie plate. Saute scallops & shrimp in butter & lemon juice. Mix eggs, ricotta, mozzarella, spinach, garlic powder & black pepper. Add scallops & shrimp. Pour into pie crust. Cover with foil. Bake for 45 minutes, then uncover & bake an additional 30-45 minutes. If desired, top with diced tomatoes to serve.
