    1 cup Forbidden Rice (black rice)
    1.5 cups water
    1 cup Trader Joe's Light Coconut Milk
    6 tbsp flaked coconut (divided 5 tbsp and 1 tbsp)
    5 cloves garlic, peeled and cut in half


Put rice, water, coconut milk, 5 tbsp coconut and garlic in rice cooker. Soak 15 minutes before turning cooker on. Turn cooker on, cook approx. 25 minutes or until the light indicates rice is finished. Spoon into bowl and top with remaining 1 tbsp coconut.

Serving Size: Makes 8 1/2 cup servings
