    2 tablespoons olive oil (or other oil)
    1 cup finely diced onion
    2 cloves garlic, finely minced
    1 14.5-oz. petite diced tomatoes
    1 lb frozen green beans
    1/2 teaspoon Old Bay Seasoning or other seasoned salt
    More salt and pepper to taste (optional)


This recipe is good served with broiled fish or chicken and coleslaw.


First mince the garlic and set aside. Then chop the onion.

Saute the onion in the oil until tender, then add the minced garlic and cook for about 1 minute. Stir in the Old Bay Seasoning. Then add the green beans and tomatoes. Cover and cook on medium-low until beans are cooked to your liking (at least 10 minutes). Taste and add salt and pepper if you like.

Non-Vegan Variation: With BACON! First, cook 2 or 3 slices of bacon until crispy. When cool, crumble and set aside. Substitute bacon fat for the oil, and proceed with the recipe above. Just before serving, stir in the reserved bacon crumbles. Count the bacon separately in your tracker. It is not included in this recipe.
