Introduction

Spinach, blueberries, whole wheat, and chocolate....and they are good...who knew? by sneaky chef. It looks complicated but really isn't. It is less time consuming if you make the puree in advance. I gave the full recipes for the mixtures which are intended to be used in several recipes. If you only want to make it for this one recipe you will want to adjust accordingly. Ingredients

    6 tablespoons i can't believe it's not butter
    3/4 cup semisweet chocolate chips
    2 large eggs
    2 teaspoons pure vanilla extract
    1/2 cup sugar
    1/2 cup purple puree (see directions below)
    1/2 cup plus 2 Tablespons flour blend (see directions below)
    1/4 cup rolled oats, ground in food processor
    1 Tablespoon unsweetened cocoa powder

    Note: original recipe called for unsalted butter instead of the I can't belive it is not butter. I also omitted a 1/4 teaspoon of salt since I didn't use the butter.

Directions

Purple Puree: 3 cups raw baby spinach or 2 cups frozen spinach, 1/2 cups fresh or frozen blueberries (no sugar added), 1 teaspoon lemon juice, 3-4 Tablespoons water.
Fill the bowl of food processor with blueberries and cooked spinach along with lemon juice and 2 Tablespoons of water, and puree on high until smooth as possible. Add more water if necessary....note: Always wash fresh spinach.
Store mixtrer in plastic bag in freezer. (preportioned for brownies in the future)

Flour mix: 1 cup whole wheat flour
1 cup all purpose white flour



Preheat oven to 350 degrees
Spray only the bottom of a 13 by 9 in pan
Melt butter and chocolate chips together. Remove from heat and allow to cool.
Meanwhile, in another bowl, stir together the eggs, vanilla, sugar, and purple puree.
Combine purple egg mixture to chocolate mixture.
In mixing bowl, stir together flour blend, cocoa powder, oats, and salt. Add this to the chocolate mixture and blen thoroughly.
Bake for 30-35 minutes, util toothpick comes out clean. dust with powdered sugar or sprinckles if desired.

calculations for 20 servings.

1 cup wheat germ unsweetened
combine well. Store in sealed plastic bag.

    Very Good
    I made these after finding their website. The office just tried them today as well. Only difference I did was I used applesauce instead of butter. Everyone actually liked them! - 4/20/09
