Pumpkin Oatmeal Muffins

1/2 cup whole wheat flour
1/2 cup white flour
1 cup pumpkin puree
1/2 cup unpacked brown sugar
1/4 cup unsweetened applesauce
1/4 cup water
1/3 cup egg whites (or two large eggs)
1/2 cup oatmeal
1 tsp pumpkin pie spice
2 tsp baking powder
1/8 tsp nutmeg
1/2 tsp salt
1/4 cup chia seeds (optional)
3-4 TBSP mini chocolate chips (optional)
The original recipes both called for a packed 1/2 c brown sugar. I went with unpacked and added the chocolate chips for a bit of additional sweetness and flavor. Both the chia and chocolate chips are optional and included in the nutritional breakdown.
Grease and flour muffin tin (or line with paper cups)
in a large mixing bowl, gently blend all ingredients until just combined
Fill prepared muffin tins 3/4 full
Bake 18-20 minutes
