    tablespoons chopped fresh basil
    3 tablespoons olive oil
    1 clove garlic, minced
    1-1/2 teaspoons chopped fresh mint
    1/4 teaspoon kosher salt
    1 zucchini, cut lengthwise into -inch slices
    1/2 (8-oz) package sliced fresh mushrooms
    1/2 small red onion, sliced
    1/2 French bread baguette, cut in half lengthwise
    3 oz goat cheese, softened
    1/2 cup baby spinach


Serve with Summer Fruit Parfaits with Honey and Mint


Preheat grill to medium-high heat. Combine
basil, oil, garlic, mint and salt. Toss together
zucchini, mushrooms, onion and 1
tablespoons oil mixture in a bowl. Grill
vegetables, in a grill basket and covered with
grill lid, 6 minutes or until tender. Spread
remaining oil mixture onto cut sides of bread.
Spread goat cheese over bottom half of bread;
top with grilled vegetables and spinach. Cover
with top half of bread. Grill sandwich 1 to 2
minutes per side or until toasted; cut sandwich
in half.
Note: You can also use mini sweet peppers on
this sandwich for even more flavor.
