Number of Servings: 6


    12 corn tortillas
    cooking spray
    8 oz cooked chicken breast
    1 1/2 cups of shredded reduced fat cheese
    1 can healthy cream of chicken soup
    1 can of diced green chiles
    6 ozs frozen spinach
    1 cup salsa
    1/2 cup fat free sour cream


Preheat oven to 350 degrees
Spray corn tortillas on both sides with cooking spray and in two batches place on a cookie sheet in the oven for 2 minutes to soften.
Shred the chicken in a bowl and add the salsa and one cup of the cheese (reserving half a cup to top the enchiladas before they're baked)
To make the sauce, place the soup, sour cream, chiles, and spinach in a blender and blend until fully combined.
To asseble the enchiladas, put 3 Tbsp of the chicken mixture in a line across the middle of each tortilla and roll to close. Place them in a 9x13 pan and cover them with the sauce. Sprinkle with remaining cheese.
Cover with tin foil and bake for 30 minutes.
A serving is 2 enchiladas.
