    1 large cucumber, peeled and de-seeded, cut lengthwise in 4 long pieces, then cubed into bite sized pieces
    2 Tbsp Tzatziki sauce (I made Nancy's Easy Tzatziki Greek Yogurt Sauce and used it in this recipe)
    1 Tbsp fat free sour cream
    1 oz crumbled low fat feta
    Dash black pepper
    Dash salt ( optional)


The cooking time is actually for the chill time in the fridge. I made this tzatziki cucumber salad to accompany my pan seared salmon (not included in nutrition value).


Mix cucumbers, Tzatziki sauce, and sour cream in a bowl until cucumber is well coated.

Add dash of black pepper, optional dash of salt and mix well.

Fold in crumbled feta taking care not to over mix it. Place mixture in a covered bowl and chill for 20 minutes. Serve immediately
