    1/2 c full fat unsweetened coconut milk
    1/4 c water
    3 tbsp coconut flour
    2 tbsp shredded coconut
    1 egg
    1 tsp vanilla extract
    Stevia (or any other sweetener) to taste
    Pinch of salt


I like to make this the night before and keep it in the fridge. It's awesome cold or room temp.


In a small saucepan, mix together coconut milk, water, coconut flour and shredded coconut. Bring to a boil (mixture will be thick), cover, reduce heat to low, and simmer for 2-3 minutes. Stir halfway through. Remove from heat.

Crack the egg into a small bowl and whisk. Add a little of the cooked coconut mixture to the egg, whisking quickly to temper the egg. Slowly pour the egg mixture into the pan, whisking quickly to prevent the egg from scrambling with the heat. Then, return to the stove over med/low heat and stir until thickened, about 2 minutes. Remove from heat and whisk in vanilla, stevia, and salt.
