    2 red bell peppers
    1/2 cup uncooked orzo pasta
    1/4 teaspoon dried oregano
    1 tablespoon olive oil
    2 teaspoons butter
    1 clove garlic
    1/2 cup baby spinach, coarsely chopped
    1/2 cup grape tomatoes, quartered
    1/2 cup crumbled feta cheese


Serve with Herb Salad with Berries and Red Onion


Preheat grill to medium-high heat. Grill
peppers, covered with grill lid, 8 to 10 minutes
or until slightly soft. Remove tops; discard
seeds. Cook orzo according to package
directions, adding oregano to pasta water;
drain. Place orzo in a large bowl; toss with oil.
Melt butter in a skillet over medium-high heat;
add garlic, and cook 1 minute. Stir in spinach
and tomatoes, and cook until spinach wilts. Add
spinach mixture, cheese and salt and pepper to
taste to pasta mixture, and toss. Spoon into
