    2 cups arugula
    1/2 cup fresh basil leaves
    1/4 cup fresh mint leaves
    1/4 cup fresh flat-leaf parsley leaves
    1-1/2 tablespoons extra virgin olive oil
    1 tablespoon fresh lemon juice
    1/2 teaspoon sugar
    1/3 cup fresh blackberries
    1/4 cup sliced red onion


Serve with Orzo-Stuffed Grilled Peppers


Combine arugula, basil, mint and parsley in a
bowl. Whisk together oil, lemon juice and sugar.
Drizzle salad with dressing, and sprinkle with
salt and pepper to taste. Add berries and onion,
and toss.
