    Organic Extra Lean Ground Turkey - 1 lb.
    Whole Large Eggs -6
    Large Egg Whites -6
    Orange Bell Pepper (chopped) - 1 cup
    Yellow Bell Pepper (chopped) - 1 cup
    Mushrooms (chopped) - 1 cup
    Cherub Tomatoes (cut in half) - 1 cup
    Earthbound Farm Deep Green Mix -
    Kale/Chard/Spinach (chopped) 2 cups
    Mrs. Dash Onion and Herb


Substitutes and Additions:
Tofu for Turkey.
Feta and Onion


- Precook Turkey with Mrs. Dash
- Chop Peppers, Mushrooms, Tomatoes and Green Mix put in large mixing bowl
- In separate mixing bowl lightly whisk whole eggs and egg whites together.
- Add cooked turkey to vegi mix in large mixing bowl.
- Pour egg mixture over the top and gently fold all ingredients together.
Add ground pepper and more Mrs. Dash - mix.
- Spoon all ingredients into muffin tin until 3/4 full.
- Bake at 350 for 20-25 minutes (maybe a few minutes longer) depending on oven.
Freeze and Save. Reheat in skillet or microwave for quick on-the-go breakfast or snack.
