FOR THE MEATBALLS
Egg white-large (1 egg white=38gms), 1 serving
Rice Chex Cereal, .25 cup (1 serving)
Onion powder, 1 tbsp
Garlic powder, 1 tbsp
Extra Virgin Olive Oil, 6 tbsp
Romain or bib lettuce for wraps
Greek Seasoning - salt free [Spice Hunter], 10 tsp
Pork, fresh, loin, country-style ribs, separable lean only, raw, 1 oz
FOR THE SAUCE-
Yogurt, plain, whole milk, 1 cup (8 fl oz)
Cucumber (peeled), 1 cup, seeded and minced
Lemon Juice 'Real Lemon' 100% juice, 1 tsp
Garlic, 6 clove
Salt, 1 dash
Pepper, black, 1 dash
Directions
1. Grind the meat in a meat grinder. Add in all seasonings, egg and crushed cereal. Form into 1.5 inch balls.
2. Heat a pan on the stove, add oil. Brown the meat balls on all sides. Cover and let cook through over low heat while making the sauce.
3. Tatziki sauce- peal and seed the cucumber. Grate the cucumber then mince. Add garlic to half of the yogurt and puree. Stir in remaining yogurt, cucumber and lemon juice. Salt and pepper to taste. Serve 3-4 meat balls on a lettuce wrap with sauce and random vegetables.
