Ingredients

    - 1 cup dried Quinoa.
    - 1/2 red onion, chopped.
    - 1 small red bell pepper, chopped.
    - 1 finely diced Lebanese cucumber.
    - 1/2 cup cherry tomatoes, halved.
    - 1/2 tsp. dried parsley
    - 1/4 cup mint leaves, chopped.
    - 1/4 teaspoon ground cumin.
    - 1/4 cup freshly squeezed lemon juice.
    - 2 tablespoons extra virgin olive oil.
    - salt and pepper, to taste.

Directions

- Cook quinoa according to package instructions.

- Combine all ingredients into a bowl, and enjoy!
