Introduction

Make patties uniform in size to help with cooking as the beets make it difficult to tell if the meat is cooked through. The addition of beets and caramelized onion helps keep the turkey from drying out. Ingredients

    1 lb ground turkey
1 1/2 cups roasted beets, grated
1/2 cup caramelized onion (about 1 medium onion, cooked down)
1 tablespoon thyme (or to taste)
1 teaspoon salt (or to taste)
1/2 teaspoon ground black pepper (or to taste)
2 tablespoons olive oil for cooking

Tips

I used a "slider press" to make uniform patties. You can easily adjust the size to fit the rolls you have available (or skip the roll altogether)
This is a recipe from my blog, Lydia's Flexitarian Kitchen.

Directions

Mix all the ingredients together and form into 12 patties.
Heat 1 tablespoon of oil to a medium skillet.
Cook 6 patties without disturbing for 4 - 5 minutes on each side.
Add the other tablespoon of oil to the skillet if needed.
Cook the remaining patties without disturbing for 4 - 5 minutes per side.

Serving Size: Makes 12 1.5 - 2 ounce patties
