    1 pound ground turkey breast
    1 large egg, beaten
    2 Tbsp finely chopped onion
    2 Tbsp crumbled feta cheese
    1 1/4 tsp oregano, divided
    1/3 cup chopped onion
    1 clove garlic, pressed
    2 tsp olive oil
    2/3 cup chopped tomato
    2/3 cup chopped zucchini
    3/4 tsp dried mint


Combine ground turkey, egg, bread crumbs, 2 tbsp finely chopped onion, feta cheese and 3/4 tsp of the oregano; shape into 4 patties. In a lightly greased skillet or griddle, cook patties for about 5 minutes per side. Heat the olive oil in a skillet with a tight fitting lid over medium heat; saute 1/3 cup chopped onion and garlic for a couple of minutes, then add tomato, zucchini, mint and remaining oregano. cover and cook over medium heat for about 5 minutes. Uncover and cook for another 5 minutes, or until liquid is absorbed. Serve burgers with veggie topping.
