    2 13.5-oz. cans unsweetened coconut milk
    1/2 cup Swerve
    1 T vanilla extract

Tips

Freezing will take 15 to 20 minutes for soft serve. If you prefer fully frozen ice cream, the ice cream should still be scoopable.
