Introduction

Use canned lentils, leftover potato if available. Use canned lentils, leftover potato if available.

Ingredients

    1/2 c chopped onion
    1 Tb olive oil
    curry powder to taste
    2 c vegetable broth
    540 ml can lentils
    water to make 6 cups

Tips

Cilantro optional.


Directions

Soften onion in oil. Add curry powder then broth and potatos. Simmer until potatos are nearly done, then add lentils (drained). When cooked, add enough water to make 6 cups total.
