    ~1 quart fresh green beans, snapped into pieces if desired
    4 slices turkey bacon, cut into pieces
    1/4 cup chopped yellow onion
    1 tablespoon olive oil
    1/2 cup low-sodium vegetable broth
    salt to taste
    pepper to taster


Heat olive oil in medium saucepan over medium heat. Add bacon and cook until browned slightly. Add onion and continue cooking until translucent. Add rest of ingredients and add water until it reaches the top of the beans. Bring to a boil, then reduce heat to medium low. Cover and cook for 30 minutes for crisp-tender beans. Continue cooking if you like them more tender.
