Introduction

An easy way to have moist, tender chicken breast. The remaining liquid is delicious over rice or quinoa. An easy way to have moist, tender chicken breast. The remaining liquid is delicious over rice or quinoa.

Ingredients

    1 skinless, boneless chicken breast, approx. 4 oz.
    1/2 teaspoon Mrs. Dash chicken grilling blend
    1 tablespoon olive oil
    1/2 cup low-sodium chicken broth

Directions

Horizontally slice the chicken breast in half. Coat each side with Mrs. Dash, using 1/4 teaspoon per half.

Heat the olive oil over medium heat. When hot, add the chicken and cook for 4 minutes per side.

Add the broth, cover, and reduce heat to low. Simmer for an additional 20 minutes.

Serving Size: Makes 2 servings
