    The description in the parentheses are what I used for this meal, and what the nutrition information is based on.

    1/2 cup cottage cheese (2%)
    1 egg substitute
    3 tbsp flour
    1 tbsp dry sugar free fat free instant pudding mix - vanilla
    2 tbsp milk


Whiz all ingredients together in mini food processor. Spray pan with non-stick spray. Cook on low till bubbles appear, flip. Cook till done.

  • Not at all like pancakes. More like crepes. For a few more calories, I used the rest of the vanilla pudding and spread it on the crepe and rolled them up. They were even good cold that way. - 5/2/08
