Number of Servings: 2


    * Chicken Breast, no skin, 0.5 breast, bone and skin removed, cubed
    * Onions, raw, 1.5 tbsp chopped
    * Celery, raw, 2 tbsp
    * Mushrooms, fresh, 1/3 cup chopped
    * Low fat cream cheese, 8 tbsp at room temperature
    * Garlic, 1.5 tsp
    * Brummel & Brown, Original Spread made with Yogurt, 1 Tbsp


In a medium pan, melt butter on medium high heat, add chicken and 1 tsp of garlic. Saute chicken a couple minutes until cooked (they're small pieces so should cook quickly). Add onion, celery and mushrooms, toss with chicken and cook a couple minutes more until celery is still a little bit crunchy. Reduce heat to medium. Add cream cheese to pan and melt, coating everything in pan. Add 1/2 tsp of garlic. If its too creamy, you can add 1/2 Tbsp of skim milk. Scoop mixture into a bowl, serve warm with tortilla chips or low-fat Triscuits. Makes about two 1/2 cup servings.
