    The burgers

    1 small onion
    1 cup bread crumbs
    4 Tbs cilantro
    1/2 jalapeño diced
    1/4 cup reduced fat sour cream
    4 tsp tabasco
    2 tsp ground cumin (I entered it as cumin seed because there was not ground cumin)
    1 large egg
    1 can of black beans (about 1.5 cups) rinsed and drained
    1 can of sweet corn drained
    2 Tbs olive oil
    1 tsp jalapeño seeds

    Spicy mayo spread
    4 Tbs light mayo
    2 Tbs cilantro
    2 tsp Tabasco
    1/2 tsp jalapeño seeds


To make the burgers:

1. Drain and rinse the black beans and place half of the can in a mixing bowl. Using a fork or potato masher, mash the beans to a paste. Add remaining beans to bowl.
2. Combine the rest of the ingredients and mix thoroughly.
3. Form the mixture into 7 equal sized patties.
4. Warm olive oil in skillet on medium to medium low heat.
4. When oil is warm place a few of the patties in.
5. Cook them for about 5-6 minutes on each side.
6. Mix the mayo spread ingredients in a small bowl.

I got some Sara Lee Whole White buns and toasted them with the remaining olive oil in the skillet.

A yummy and easy side is homemade salsa and chips or Spanish/Mexican rice.
