    2 large eggs, well beaten
    1 cup spinach, wilted
    1 Tbsp. chopped red onion
    1/8 cup mushroom stems and pieces, drained
    4 cherry tomatoes, chopped
    1/8 cup reduced fat shredded cheddar


It is important to keep heat low and cook slowly and evenly. If it seems that egg is getting done too quickly, reduce heat, so cooking times may vary.


Heat non-stick skillet sprayed with non-stick cooking spray over medium low heat while preparing ingredients. Wilt spinach in microwave (about 45 seconds). Pour well beaten egg into skillet. When bottom of egg begins to set, top with spinach and other ingredients, ending with cheese. Add salt and pepper to taste. Cook open for about 2 minutes, then fold in half. Cook on each side about 2-2 1/2 minutes or until desired doneness.
