    3 medium beets (3/4 pound)
    Fresh Chives (1tbsp)
    Minced Garlic (1 clove)
    2 Tablespoons balsamic vinegar
    pinch of sea salt


Place beets in a medium saucepan and cover with 1 inch of water. Cover the pot and simmer for about 1 hour or until beets are tender. Drain the beets and rinse under cold water to slip off the skins. Cut the beets in half, then cut each half into 3 wedges. Place in a bowl, toss with the chives balsamic vinegar and salt. These can be served right away while still warm, but the flavor will be
even more intense if you let them marinate for at least 30 minutes. Refrigerated, they will keep for
several days (great hot or cold).
