Ingredients

    Flour, whole grain, 142 grams
    *Bicarbonate of Soda, 0.2 tbsp
    Salt, 1 dash
    Butter, unsalted, 56 grams
    Brown Sugar, 114 grams
    Banana, fresh, 2 medium
    Egg, fresh, whole, raw, 1 medium
    Milk, 40ml
    Vinegar, 0.5 tsp

Directions

Cream the butter and sugar until smooth. Mix the milk and vinegar, then add to the butter mixture with the bananas and egg. Stir well then fold in the dry ingredients. Spoon into silicon muffin moulds and bake at gas mark 5 for 25-30 minutes.
