Ingredients

Rice Mixture - makes 4 cooked cups
2 cups brown rice
4 1/2 cups cold water
4 celery stalks, chopped fine
1 medium onion, chopped fine
1-3 cloves of garlic, minced
1 tsp salt
4 tbsp unsalted butter
Mixed Meats
2 lbs ground beef
1 lbs ground pork
1 lbs ground Italian Turkey Sausage - no casings
2 tbsp Worcestershire Sauce
4 large eggs, slightly beaten
Tips
You can use either Mild or Hot Italian Turkey Sausage, or Chicken Sausage works well too.
Directions
In a large stock pot, add rice, water, celery, onion, garlic, salt, and butter. Cover pot and bring to a boil, reduce heat to low and cook covered for 40-50 minutes until all liquid is absorbed. Fluff with a fork when done. Set aside in fridge to cool completely for 1-2 hours.
Preheat oven to 350.
In a large mixing bowl combine cooled rice mixture with ground beef, pork, sausage, worcestershire sauce, and beaten eggs. Using your hands, gently combine all ingredients, without over-mixing which will break down the fats in the meats.
Free form 2 large loafs on a baking sheet or in a baking dish. Bake for approx 1 hour at 350 degrees or until an internal temp of 160 is reached.
