A Spicy Slaw! A Spicy Slaw!
Number of Servings: 32

Ingredients

    6 slices bacon
    1 Large onion, chopped
    1 Large Green pepper, chopped
    1 Large head of cabbage, chopped or shredded ( about 14 cups)
    salt to taste
    1 - 10oz can diced tomatoes with green chilies (I use the Rotel brand)

Directions

In a large skillet, fry bacon until crisp.Remove bacon to paper towel to drain. Crumble and set aside.

In bacon grease, cook onions & peppers until limp. About 5 minutes

Add Cabbage and cook until limp but not soft, about 3-5 minutes.

Add chili powder and salt to taste. Add tomatoes and simmer just until warmed troughly. Slaw should be slight crisp. Adjust seasonings in needed.

Serve quickly with crumbled bacon on top.

Makes 32----1/2 cup servings
