Introduction

This is a great way to use up berries that are ready to go bad. This is a great way to use up berries that are ready to go bad.
Number of Servings: 12

Ingredients

    1 1/2 cups fresh strawberries
    1/2 cup pure cane sugar
    1/3 cup coconut oil
    2 eggs
    1 1/2 cups gluten free all purpose flour
    1/2 tsp baking soda
    1/2 tsp salt
    1/2 tsp cinnamon

Tips

Add 1/3 cups of gluten free chocolate chips


Directions

Mash strawberries in mixing bowl add sugar, coconut oil (melted) and eggs and stir together. Add the rest of the ingredients and mix until moistened. Fill 12 muffin liners in muffin tin half full. Bake at 425 degree oven for 15-18 minutes until a toothpick comes out clean. Cool and enjoy!!
