Ingredients

    1/2 can Sofrito tomato sauce
    1/2 can tomato paste
    5 Red potatoes, peeled and chopped
    1/2 jar Goya Alcaparrado (olives, capers, etc)
    2lbs boneless, skinless chicken breast, cubed/sliced
    2 links pre-cooked Chorizo Sausage, sliced
    2 cups white Rice, cooked
    enough water to cover chicken
    1/2 med yellow onion, chopped
    2 tbls EVOO
    2 cloves garlic, minced

Directions

I like to cut all my ingredients first, so slice/cube chicken into bite-sized pcs, peel and cut potatoes, slice sausages, dice onion and mince garlic.
Add olive oil to pan and heat on med, sautee the onions and garlic. Add chicken and sear outside. Add water to cover chicken entirely. Add the tomato paste, sofrito and potatoes and increase to med high heat. When potatoes are about half way cooked add the sausage and the alcaparrado. Continue to cook until potatoes are tender, Serve over cooked rice.
