Very tasty meatless option and smells wonderful cooking! Very tasty meatless option and smells wonderful cooking!
Number of Servings: 10


    Lentils, 1 cup
    Water, 2 cup
    Onions, raw, 2 medium chopped
    Carrots, raw, 3 medium, chopped
    Celery, raw, 4 stalk, medium, chopped
    3/4 cup ketchup
    1 small can V-8 juice
    3 T brown sugar
    1 T Cider Vinegar
    1 T Yellow Mustard


Sort over lentils and combine with water in medium saucepan. Bring to a boil, then cover and simmer for 10 minutes. Place in 3-4 quart crockpot with remaining ingredients except for vinegar, mustard.

Cover and cook for 10-12 hours on low or 5-6 on high until thickened. Stir in vinegar and mustard just before serving.

NOTE: calories for buns not included in calorie count. Makes 10 sandwiches

    I added some spicy organic tomato juice and a serrano to pep it up a bit. I also added cheese to a toasted bun and this is very close to sloppy joe! - 10/27/14
