Ingredients

    1 8 oz. pkg. Annie Chun's Maifun Brown Rice Noodles, dry
    2 qts. hot/boiling water
    1 1/3 cup sweet red pepper, chopped
    1 leek, sliced diagonally
    1 chicken breast, approx. 8 oz.
    2 cups fresh mushrooms, chopped
    2 T. minced garlic (Spice World)
    1/4 t. sea salt (optional)
    1/4 t. black pepper
    2 T. Soy Sauce
    2 T. cooking oil (I used grapeseed. Can also use peanut oil, canola, etc.)

Tips

Original recipe called for teriyaki sauce. I didn't have any on hand when I made it. My husband added butter to his noodles to give a little more flavor. I ate mine without butter. If you use teriyaki or other sauce with this, please adjust calories on your tracker. Enjoy.


Directions

Add boiling water to maifun noodles and set aside for 6-8 minutes (no cooking required). Add peppers, mushrooms, leek, and mushrooms to oiled pan. Add garlic and salt and pepper. Saute for a few minutes. When noodles are done, drain and add to vegetables. Add soy sauce. Cook an additional 1-2 minutes.
