    Eggs, large -2
    Egg whites- 9 Tbsps. (=3 eggs)
    Zucchini- 3/4 cup chopped small pieces
    Red Onion- 1/4 cup diced
    Basil- 1/4 cup sliced thin
    Water- 1 Tbsp.
    Black Pepper & Salt to taste


Can add cheese or different veggies per preferences. This is a great portable breakfast


Heat oven to 350 degrees
Whisk eggs, egg whites and water
Add vegetables and spices
Mix thoroughly
Spray large muffin pan with some type of non-stick spray
Bake for 15-18 minutes (till done and not liquid)
Loosen from muffin tray, let cool then turn upside down and serve or store
