Ingredients

    Kale- washed and rinsed, torn leaves 4 cups
    Lime- juice of one lime
    Extra Virgin Olive Oil- 3 Tbsps.
    black pepper and coarse salt- to taste
    Israeli Couscous- 2/3 cup dry- cook to directions
    Cheddar cheese- 1/2 cup diced
    ( Cotija cheese preferred)

Tips

Serve room temp


Directions

Rinse kale and tear leaves into small pieces- take ribs out
Juice one lime and coat kale
Add olive oil, salt and pepper, toss well
add chopped cheese
Cook couscous till al dente, rinse with cold water, let sit few minutes, drain and add to salad
Toss well

Serving Size: makes 12 1/2 cup servings
