    1 lb. lean ground turkey (93% fat free)
    32 oz jar marinara sauce
    1 cup fresh or frozen broccoli florets
    1 small yellow squash, cut in 1" pieces
    1 small zucchini, cut in 1" pieces
    1/2 cup carrots, cut in 1" pieces
    1 cup onions, quartered then sliced
    1 cup fresh mushrooms, stems included, sliced thickly


Frozen vegetables substitute nicely for fresh. A frozen vegetable blend works well and different types of blends offer variety.


Brown turkey in skillet, draining any fat. Add sauce and carrots, carrots and onion. Simmer 10 minutes. Add remaining vegetables and simmer until desired doneness of vegetables.
