    1 1/2 tsp Olive Oil
    1 1/2 tsp Butter
    1/4 Small Onion, chopped
    1/4 C Fresh Mushroom, chopped
    1/2 Fresh Red Bell Pepper, chopped
    1 Clove Garlic, finely chopped
    2/3 C Cooked Rice
    1/2 C Finely Chopped, Cooked Kale
    1/8 tsp Ground Mustard
    Pinch of Cayenne
    Salt & Pepper to taste


This uses such a small amount of kale, that you'll need to be prepared to find a use for the rest; I suggest Zuppa Toscana. 8-)


In saucepan, heat butter until melted, add olive oil
Saute onion until transparent, add mushrooms; cook until they are sweaty, then stir in chopped pepper.
When peppers are wilted, add kale, rice and spices.
Cook and stir until rice is hot.
