    1 1/4 Cup Heart Smart Bisquik
    1/4 Cup Parmesan Cheese
    3 Egg Whites
    1 Egg
    3 Zucchinis sliced thin or shredded and squeezed dry
    1 Shallot
    Salt & Pepper
    1 Tablespoon Olive Oil


Spray 13x9 pan with cooking spray. Pre-heat oven to 325. Shred or slice thin zucchini and shallot. Add all ingredients to a large bowl and then spread in pan. It will look like you don't have enough "batter". Bake until golden brown - center is set.
