Ingredients

2 c. Quaker Oats Old-Fashioned Rolled Oats
1/4 c. raw Quinoa rinsed and drained
3/4 c. Cashews
3/4 c. Shredded Coconut
2 T. Brown Sugar
1 t.Ginger
1/8 t. Cinnamon
1/2 t. Salt
1/4 c. Coconut Oil melted
1/2 c.Pure Maple syrup
1 t.Vanilla Extract
1/4 c Ginger, Crystallized
Directions
Preheat oven to 300 degrees. Line a large baking sheet with aluminum foil and spray with non-stick cooking spray.
In a bowl, stir together the oats,rinsed quinoa, cashews, coconut, brown sugar, cinnamon and salt until well combined.
In another smaller bowl, combine the melted coconut oil, maple syrup and vanilla. Pour wet ingredients over the dry and toss to coat.
Spread the mixture onto pan evenly. Bake for 30-40, stirring the granola every 10 minutes, until golden brown, fragrant, and beginning to crisp. The granola crisps further as it cools. Remove from oven and sprinkle with the crystallized ginger. cool completely and store the granola in airtight containers.
