I found a recipe some years ago on Eating Well and adapted it for our tastes - we love this ! It is quick, easy and loved by my vegetarians and meat eaters alike. Ingredients

    16 oz pkg shelf-stable gnocchi
    1 med yellow onion sliced thin
    4 cloves garlic minced
    1 cup low-sodium vegetable broth
    8 cups chopped kale
    1 can (16 oz) cannellini beans, rinsed well
    1/2 cup shredded part-skim mozzarella
    1/4 cup grated parmesan
    1.5 TBS olive oil


Directions

Heat half of the olive oil in a large skillet and add gnocchi. Saute until lightly browned and soft, about 7-8 minutes. Transfer to bowl.
Add the remaining olive oil and onions to skillet. Saute for 5 minutes or so until beginning to soften and carmelize; add garlic and stir together. Add broth and kale, stirring until kale begins to wilt. Add beans stirring to combine. Cover and simmer for 5-6 minutes. Remove cover, sprinkle with ground black pepper and italian seasonings to taste and add mozzarella and parmesan. Recover and cook until cheese melts, about 3-4 minutes more.

Serving Size: Makes 8 servings 1 cup each
