Number of Servings: 4


    Broccoli raab, 1 bunch
    Olive Oil, 3 tbsp
    Sun Dried Tomatoes, .25 cup, sliced thinly
    Mushrooms, fresh, 2 cup, sliced (I used oyster)
    Beans, great northern, .5 cup
    Garlic, 3 clove, minced
    Balsamic Vinegar, 3 tablespoon
    Whole Wheat Spirals (Pasta), 8 oz
    1 tsp dried basil
    1 tsp dried oregano
    1 tsp red pepper flakes

    (ingredient measurements are approximate)


Start by filling a large pot with water, salting well. Once boiling, toss in whole broccoli raab and let blanch for 2 minutes.

After two minutes, move to an ice bath and drain. Cut into one-inch pieces.

Heat olive oil in a skillet and sautee mushrooms until softened. Add garlic and red pepper flakes and sautee until the garlic is just beginning to cook. Stir in broccoli raab, sun-dried tomatoes, great northern beans, balsamic vinegar and seasonings. Allow to cook until the broccoli raab is tender (about five minutes). Season with salt and pepper to taste.

Serve over whole wheat pasta. Add some freshly grated romano cheese or some creamy goat cheese (as I did!).

  • We just harvested our broccoli raab. We've never grown it before nor have we tasted it. Just wanted to try something new, so I was glad to find this recipe. It sounds good. Tnx - 7/8/10
