Ingredients

    4 Lemons, sliced and pitted
    2 tsp Ginger Root, grated
    24 oz chicken broth
    2 Tsp Italian herb mix
    5 boneless chicken breast halves (20 oz)

Directions

Line the bottom of a large heavy skillet with lemons, place the chicken breasts on the lemons. Mix the grated ginger and Italian herbs to the chicken broth and pour mixture over the chicken and lemons. Bring to a boil and reduce to simmer. Simmer covered for 30 minutes or until chicken is fork tender. Remove from the heat and place the chicken on a platter to cool to room temperature. I shred the chicken to use for salads or sandwiches. This can also be served hot with brown rice and vegetables for a healthy low fat dinner
