Ingredients

    3 skinless chicken breasts
    1 medium yellow onion
    1/2 cup chopped fresh mushrooms
    1/2 cup chopped red bell pepper
    1 jar of Safeway Select sesame and ginger simmer sauce
    2 cups dry red quinoa
    1 cup of frozen chopped spinach

also good as a cold dish


Directions

set quinoa to cooked when simmering add frozen spinach. Add some oil to pan and saute onion, when soften brown diced chicken. When cooked added bell pepper and mushrooms too and 1 full jar of sesame ginger sauce. cover and let simmer til chicken is fully cooked. aprox 20mins. when quinoa is cooked mixed the chicken mixture to quinoa. serve and enjoy.

Serving Size: makes 8 - 1 cup portions
