    9 lasagna noodles
    16 oz ground turkey sausage
    2 eggplants
    1 can mushrooms
    2c mozzarella cheese
    1 jar Prego sauce


Peel and slice eggplants. Broil them in oven for 3-4 mins per side until tender. Meanwhile cook noodles and drain. Brown ground turkey.

Layer half noodles, eggplant, meat, mushrooms, sauce and cheese in 9x13 in pan. Make two layers.

Bake at 350 degrees with tin foil for 20 mins then remove tin foil and bake another 10 mins.
