Introduction

Ingredients

    1 medium yellow onion, chopped
    4 C baby spinach, chopped
    1 T olive oil
    1 medium zucchini, grated (about 1 Cup)
    2 lbs ground turkey
    1 C spaghetti sauce, divided
    2 eggs
    2 C bread crumbs
    salt and pepper to taste

Tips

Use a bold spaghetti sauce or throw in some extra Italian spices. You could probably get 10 servings out of this given how much the zucchini fills it out.


Directions

Heat the olive oil in a skillet and saute the onion until tender. Add the spinach and stir until wilted. Allow this to cool then mix with all remaining ingredients except 1/2 C spaghetti sauce. Spray a 9x13" baking dish with nonstick spray and form mixture into a loaf in the dish. Spread remaining 1/2 C spaghetti sauce on top. Cover with foil. Bake at 425 for 55 minutes. Remove foil and bake another 10 min or until internal temperature is at least 165.
