Ingredients

    12 oz. (340g) Organic Cream Cheese
    1 Cup (236ml) Organic Heavy Whipping Cream
    1 tsp Alcohol Free Vanilla Extract
    30 to 40 drops EZ-Sweetz liquid Sweetener (according to taste)
    3 Small Strawberries (optional)
    8 Blue Berries (optional)

Tips

This will last in the fridge for a week or so. It can be frozen for a month or more and tastes delicious semi frozen on a hot summer day.


Directions

1. Leave the cream cheese out to soften and reach room temperature.
2. With a hand mixer, in a mixing bowl beat the heavy whipping cream till it forms medium stiff peaks, set aside.
3. In another bowl mix the cream cheese, vanilla and liquid sweetener. At this point, taste if it's sweet enough for you. Add more drops if desired (EZ-Sweetz doesn't raise blood glucose). Then gently fold in the heavy whipping cream till well combined.
4. Grease an 8" pie plate with butter or another healthy fat.
5. Pour the cream cheese mixture into the pie plate.
6. Score the top of the cheese cake to make 8 slices and decorate with a few slices of strawberries and 1 blueberry per slice.
7. Cover with cling wrap and refrigerated for at least 2 hours or overnight.
