Introduction

It seems I never have all the veggies I need for this soup. Like celery, but it is good even without it. When I have it I use about a cup chopped. Sometimes I also use tomatoes. Ingredients

    2 Chicken Breast (cooked), no skin, roasted, about
    8 ounces
    1 32 oz box Swanson Chicken Broth 99% Fat Free
    1 Cup Fresh Green Beans cut into thirds
    1 Cup Fresh Peas, shelled or use Frozen
    1 Cup Carrots, chopped
    1 Cup Celery chopped
    1/4 Cup Red Onion, chopped
    6 cloves Garlic
    2 small Yukon Gold Potato
    3 Cups water
    1 Tbl olive oil
    pepper to taste

Directions

Start by cooking the chicken breast, while that cooks prep the vegetables.
add the tablespoon of olive oil to a dutch oven add onion, carrot, celery. Saute for about 5 min then add the chicken broth, water, potatoes, and garlic. Bring to a boil and add green beans and peas. Boil for at least a minute and when the beans are tender it is ready to eat.

Serving Size: Makes about 3 quarts of soup
