Ingredients

3/4 cup Spinach, shredded
1 Cup Romaine Lettuce, shredded
4 medium baby carrots, sliced
3 medium potabella mushrooms, sliced
1/4 Cup Cucumbers, sliced
4 Grape or Cherry Tomatoes, halved
2 Tbsp Navy Beans
Directions
After cleaning spinach and lettuce, shred both and lay on a plate. Top with carrots, mushrooms, cucumbers, tomatoes, and navy beans.
Use a salad dressing of your choice.
To add a little spice, take 1 Tofurkey Italian Sausage (it's meetless), thinly slice it as you would a pepperoni. Fry it in extra virgin olive oil spray on both sides for a few minutes until it browns a bit. Toss it on your salad with 1/4 rice cheese....Yummy
