Ingredients

    5 medium russet potatoes
    2 large eggs, boiled
    1 cup chopped celery
    1/2 cup chopped sweet onion
    3 TB apple cider vinegar
    3 small dill pickles, chopped
    2 TB yellow mustard
    3/4 cup lite mayonnaise
    1 tsp black pepper

Tips

Cool down potatoes and eggs more quickly and safely in an ice water bath. Keep well chilled at all times.


Directions

Once potatoes have cooled, remove skins and cut into large chunks. Put in a large bowl and stir together with the remaining ingredients. Chill and serve.
