Ingredients

    2 tbs olive or canola oil
    1 garlic clove minced
    1 large onion, diced
    1 large green bell pepper, diced
    2 cans Rotel's Diced Tomatoes & Green Chiles (Mild or regular, depending on taste)
    2 cans creamed corn
    1 can whole kernel corn
    2 cups low sodium, low fat chicken broth
    1 cup milk (nonfat or 2%)
    2 cups diced chicken breast

Directions

Saute garlic, onion, and bell pepper until onion is translucent. Add all other ingredients and simmer over low heat 30 minutes.

Serve with grated cheese and tortilla chips (not included in nutrition total).
