Introduction

Not overly sweet, perfect breakfast muffin! Not overly sweet, perfect breakfast muffin!
Number of Servings: 12

Ingredients

    1 C Whole Wheat Flour
    1 tsp baking powder
    1/2 t baking soda
    1/4 cup unsweetened cocoa
    1/4 c stevia
    1 cup old fashion oats
    1/4 c light sour cream
    1 large egg
    2 large ripe bananas, mashed
    1/4 c unsweetened applesauce

Directions

Preheat the oven at 400 F.
Grease a 12 cup muffin pan and set it aside.
Mash the bananas with the help of a fork, mash it really well.
In a large bowl sift the flour with baking powder and baking soda.
Sift the cocoa in it.
In a separate bowl, beat the egg, and add the sugar and honey.
Mix it well and add the mashed bananas and oil, blend it well.
Stir in the oats and sour cream, blend it well.
Now add these wet ingredients mixture into the dry bowl that has flour and cocoa in it.
Fold it well with cutting action, till few lump remains.
Scoop out the muffin mixture into the prepared muffin pan and level the top.
Bake it in a preheated oven at 400 F for 20 minutes, until the skewer comes clean.
Cool the muffins in a pan for couple of minutes before taking them out.
Cool the muffins on a wire rack.
